Ingredienti:(solitamente faccio a occhio, questa volta li ho pesati)
250 gr. di basilico
100 gr. di mandorle con la pellicina
70 gr. di grana o parmigiano
30 gr. di olio extravergine d' oliva
10 gr. di sale grosso
Ho pelato le mandorle "tuffandole" nell'acqua bollente, lasciandole per 1 minuto circa. Le ho scolate e poi...si pelano ch'è una bellezza. Dopodichè ho messo tutto nel frullatore fuorchè l'olio che ho aggiunto gradatamente.
A Volterra ho acquistato questo meraviglioso mortaio con il pestello di legno, potevo non fare la furbetta e non fotografarlo. Non sia mai.
mi piace molto il pesto di mandorle, però lo faccio con la rughetta invece con il basilico. proverò! e mi piace molto anche la ciambella!
